The hustle and bustle of Christmas morning can be hectic for sure! After staying up late to wrap and assemble gifts followed by early mornings with excited kiddos, breakfast might be the last thing on your mind. Eggs Benedict Casserole 

Serves 10  Total Time: 1.5 hours  Prep Time: 20 minutes 

Ingredients:  cooking spray  8 large eggs  3 cups milk  3 green onions, chopped  1 teaspoon onion powder  1 teaspoon salt  1/2 teaspoon paprika  3/4 pounds Canadian bacon, cut into 1/2 inch cubes  6 English muffins  1 (.9 ounce) package of Hollandaise sauce mix  1/2 cup butter 

Directions: 

  1. Preheat the oven to 375 degrees. 

  2. Spray 9X13 inch baking dish with cooking spray 

  3. Whisk eggs, 2 cups milk, green onions, onion powder, salt in a large bowl. 

  4. Layer half Canadian bacon in the prepared baking dish. Spread English muffins over meat and top with remaining Canadian bacon. Pour egg mixture over the casserole. 

  5. Sprinkle casserole with paprika; cover with aluminum foil. 

  6. Bake until eggs are nearly set, about 30 minutes. Remove foil. Continue baking until eggs are completely set, about 15 more minutes. 

  7. Whisk hollandaise sauce mix with 1cup milk in a saucepan. Add butter and bring to boil, stirring frequently. Reduce heat to medium-low, simmer, and stir until thickened, about 1 minute. 

  8. Drizzle sauce over the casserole to serve.

Crustless Quiche Lorraine 

Serves 6
Prep Time: 10 minutes  Total Time: 45 minutes 

Ingredients:  Cooking spray  6 strips of center cut bacon  1 cup grated Gruyere cheese  2/3 cup of 2% milk  1/4 cup half and half cream  6 large eggs  1/2 teaspoon salt  1/8 teaspoon ground black pepper  Pinch freshly grated nutmeg  2 tablespoons chives, chopped 

Directions:

  1. Preheat the oven to 350F degrees. 

  2. Spray pie dish with cooking spray 

  3. Cook the bacon. 

  4. Evenly spread the bacon in the dish and top id evenly with the grated gruyere cheese. 

  5. Make the custard mixture by whisking together the milk, half and half, eggs, salt, black pepper, and the nutmeg. 

  6. Pour the custard into the dish and top with chives. 

  7. Bake for 35 minutes until the center is set. 

  8. Cut the quiche into 6 pieces and serve.
